Zucchini Casserole

6 cups sliced or diced zucchini
1 cup grated carrots
1/2  cup chopped onion

Boil above mixture with water for about 5 minutes. Drain thoroughly

Add:

1 can cream of chicken or celery soup
1 cup sour cream
Salt and pepper to taste

In another bowl mix together

1/2 cup melted butter
1 box of stove top dressing (I use chicken) -  (don't prepare stuffing, use dry)

Layer stuffing mixture with Zucchini mixture in a 9x13 greased pan.
End with stuffing mixture on top.
Bake at 350 degrees for 30 minutes or until bubbly.
