Turkey Enchiladas

1 lb. ground turkey breast
2 cups (no salt) salsa (or low salt)
1 (10 oz) package fresh spinach
8 oz. package of cream cheese, cubed.  (low fat)
12 corn tortillas
Cooking Oil
1 can of (no salt) tomatoes, undrained
1 Teaspoon Cumin
3/4 cup shredded (low fat) cheddar cheese
Sour Cream (low fat)

Cook turkey and add 1 cup salsa, spinach
and cream cheese.  Cook until cheese melts and
remove from heat.

Grill each tortilla in a pan with hot oil  - approx.
15 seconds per side or until slightly browned.

Wrap 1/3 cup turkey mixture into each tortilla
and place in 9x13 baking dish.

Mix remaining 1 cup of salsa, tomato and cumin,
and pour over tortillas.

Bake for 350 degrees for 25-30 minutes.

Sprinkle with cheese.

May serve on lettice with sour cream.
