2 cups flour
1 cup Quick or Old Fashioned oats, uncooked
1 tsp. baking soda
1 tsp. ground cinnamon
1 cup softened butter or margarine
1 cup firmly packed brown sugar
1 cup gran. sugar
1 egg, slightly beaten
1 tsp. vanilla extract
1 cup Libby's solid pack pumpkin
1/2 tsp. salt
Assorted icings, candies and/or nuts
Preheat oven to 350 degrees. Combine
flour, oats, soda, cinnamon, and salt, set
aside. Cream butter, add sugar, beating until
light and fluffy. Add egg and vanilla. Add
flour mixture, then pumpkin. Drop by round
tablespoons onto greased cookie sheet.
Mold into pumpkin (approx. 3" cookie). Shape
with stem. Bake at 350 degrees for 20-25 minutes.
Cool, then decorate with icing, nuts or candies.
Note: You can also add 1 cup raisins or
chocolate chips. These are very moist cookies!
