Cabbage Soup

2 oz. rice - cook 12- 15 minutes. with 3/4 cup water

Saute the following ingredients:
1 Tablespoon plus 1 Teaspoon Olive Oil
2 Garlic Cloves, slivered
1 cup thin carrot slices
1/2 cup ground pepper

Add:
4 cups cabbage - cut into thin slices.
1 teaspoon brown sugar to cabbage

Cook 4 minutes.

Add:
2 1/2 cups water
1 1/2 cup tomatoes
8 oz. drained cooked red beans
3/4 teaspoons salt
2 Tablespoons Dill

Stir in:
1 Tablespoon balsamic or red wine vinegar

Top each bowl with 2 Tablespoons Sour Cream (optional)
